Don't ask me why they are called "Cowboys" 'cuz I don't know. They are great though.
Large boneless/skinless chicken breasts (pick a number)
Pepper jack cheese
Sliced Jalepenos
Bacon
Slice a pocket into the SIDE of each chicken breast. Stuff as much cheese and peppers as will fit. Wrap tightly with bacon strips.
I guess they are pretty great when grilled but I have a hard time with chicken breasts on the grill. I just baked 'em at 425 degrees until done. Nums
